When are simple carbs better than complex carbs.I see a lot of confusion when people talk about simple and complex carbs. I often see people saying you should eat your complex carbs and avoid simple carbs. The reality is that this is not always good advice, the term simple carb refers to a one or two molecules of sugar, such as fructose and table sugar. A complex carb is a starch made up of a long chain of hundreds or even thousands of sugar molecules. So when is a simple carb better than a complex carb? when you compare an unprocessed simple carb to a highly processed complex carb such as the comparison of a whole Apple to white bread. The Apple which is mostly simple carbs has a glycemic number of 51, the white bread which is complex carb has a glycemic number of 100. This is because when the simple carb is whole and intact like an apple, there’s fiber and other nutrients to slow down its absorption. By contrast the white bread is made up of finely processed flour which is digested quickly driving up the blood sugar. So when choosing carbs, choose whole unprocessed carbs regardless of whether they’re simple or complex.
